Fergal Phelan Head Chef at Mcleary’s steak and seafood restaurant in Waterford’s city centre. Originally from Ballyragget in north Kilkenny Fergal grew up in the family run Cafe gaining vast experience in traditional cooking from both his grandmother and mother. Fergal has an interest and experience in both steak and seafood cooking as well as baking and pastry having studied advanced pastry in WIT.
Fergal has studied on two occasions at WIT and represented the college in various cookery competitions. Fergal is a professional head Chef with a degree in food product development and is currently studying for masters in food innovation at DIT.
With over twenty years of experience in some of Waterford’s most popular restaurants Fergal prides himself in the use of local fresh ingredients and traditional cooking processes. Having travelled internationally he has also a love for in French, Italian and Spanish cuisine. Fergal believes in the use of tried and tested cooking methods. Furthermore, Fergal promotes and values an understanding that organisation and knowledge of the basic cooking processes is the foundation for all good cooking.
